Brown Sugar Molasses Cookies

1 3/4 cup flour
2 tsp cornstarch
1 tsp baking soda
1/4 tsp salt
1/2 cup coconut oil
1 cup dark brown sugar
1 egg
2 Tbsp vanilla
1 Tbsp molasses
Directions
- In a medium mixing bowl sift together the flour, cornstarch, baking soda and salt
- In a large mixing bowl, cream together the coconut oil and brown sugar, then add in the egg, vanilla and molasses, and beat until combined
- Gradually add the dry ingredients to the large mixing bowl and beat on medium-high speed until combined
- Scoop into ~2 Tbsp balls and place on a cookie sheet
- Chill for 30 minutes
- Bake in a preheated oven at 350F for 8-10 minutes
- Place on a cooling rack and allow to cool before eating
These cookies. Are the best cookies. Yes, the recipe calls for coconut oil instead of butter. Yes, that looks like a lot of vanilla. Yes, you add molasses to already dark brown sugar. But they are the softest, moistest, most delicious-est cookies.
I have made these SO many times and I have yet to find someone who doesn’t like them.
During the holidays I sometimes add ginger to these and pass them off as gingersnaps.
They stay soft and chewy for DAYS.
