Quick and Easy Pancakes

1 1/2 cups flour
1/4 cup sugar
3 1/2 tsp baking powder
1/2 tsp salt
1 egg
3 tbsp vegetable oil (or melted butter)
1 tsp vanilla extract
1 1/4 cup milk
Directions
- Sift the dry ingredients together in a large mixing bowl.
- Add wet ingredients and mix until just combined- there will be lumps!
- Pour about 1/4 cup of batter onto a preheated griddle
- Cook until bubbles form, then flip (about 3-5 minutes per side)
- Remove from heat and serve with your favorite toppings!
I always, and I mean ALWAYS double this recipe- at least!
After mixing, let the pancake batter sit for about 5 minutes. This will help the pancakes be fluffier. I always do this on accident because I have forgotten to preheat the griddle
Freeze leftover pancakes and reheat in the microwave for 30-60 seconds for a quick breakfast. My kids learned to use the “EZ ON” button on our microwave and my life hasn’t been the same since.
We do breakfast for dinner about twice per month, and we alternate between pancakes and waffles. We always make plenty of extras to have for breakfast later on.
