Watermelon Salsa

2 cups watermelon, chopped
1 ripe mango, chopped
1 Granny Smith apple, chopped- I like it unpeeled, but that’s up to you
1 small red onion, chopped
2 jalapeño peppers, deseeded and chopped
1 bunch cilantro, chopped
2 cloves garlic, minced
2 limes
2 Tbsp sugar
1 Tbsp rice wine vinegar
Directions
- Put the chopped watermelon, mango, apple, red onion, jalapeños, and cilantro into a large bowl, along with the minced garlic.
- Juice both limes over the bowl
- Add the sugar and rice wine vinegar, and stir thoroughly to combine
- Refrigerate until it’s time to serve!
This is one of my dad’s recipes, and as we’re well into summer here in southern California I thought this would be a perfect late summer BBQ recipe to share.
Dad likes to serve these with lime tortilla chips (I agree), but any kind of tortilla chips will work.
I also think this salsa would be good on grilled shrimp tacos!
The note from my dad says to adjust the sugar and vinegar to your taste, but if you’re like me you’ll be adding another squeeze or two of lime 🙂
