Ingredients

  • 1 box stuffing mix

  • 2 cups cooked chicken (cubed, shredded, etc)

  • 2 cups frozen broccoli

  • 1 can (10.75 oz) condensed broccoli & cheese soup

  • 1 tsp garlic powder

  • 1 cup shredded cheddar cheese

  • salt & pepper (to taste)

Directions

  • Preheat the oven to 350 degrees, and grease an 11X7 baking dish
  • Prepare stuffing according to directions on the box
  • In a large bowl mix together the chicken, broccoli, condensed soup, garlic powder, and salt & pepper
  • Spread the chicken and broccoli mixture into the baking dish, top with the prepared stuffing, and then sprinkle with the shredded cheese
  • Cover the pan with foil and bake in the oven for about 20 minutes, then remove the foil and continue baking until the casserole is heated through and the cheese is done to your liking

Well, school has started which can only mean one thing- casserole season. It’s not nearly cold enough for casseroles at my house, but I don’t care.

My stepmom made this recipe while I was visiting over the summer and my only gripe is that the serving size is a LIE. SIX?? More like six bites is all it will take me to clean my plate. I made this for two adults, one child who eats normally and one child who eats nothing and we BARELY had anything left.
